A wholesome alternative to the store bought syrup! This is great for homemade strawberry milk, but you can also add it to plain Greek yogurt, topping ice cream, oatmeal, granola or even adding to butter for toast or pancakes.

Ingredients

SERVINGS: 5

  • Strawberries, 1 pound fresh, hulled & quartered or 1½ cups frozen
  • ¾ cup sugar
  • ½ water
  • ½ vanilla bean, split lengthwise, or 1½ teaspoons vanilla extract
  • Milk

Preparation

  • Bring strawberries, sugar, and ¼ cup water to a boil over medium heat, then reduce heat and simmer, skimming occasionally, about 10-12 minutes.
  • Remove from heat, then add vanilla bean. Let cool completely, at least 1 hour.
  • Strain the strawberry mixture. Really press the strawberries to get as much juice out of them as possible! Use the leftover fruit to eat with yogurt or ice cream, don’t just throw it away!
  • Chill syrup at least 1 hour. Can be stored in the fridge in an airtight container for up to a week.
  • To serve, stir ¼ cup syrup into 1 cup milk.
